En Alsace, Saint Nicolas passe le 6 décembre pour récompenser les enfants méritants en leur offrant des friandises et des cadeaux (traditionnellement un pain d'épices et une orange).

Il est aidé par son âne et est accompagné par le Hanss Trapp ou père Fouettard, chargé de punir ceux qui n'ont pas été sages. Le Hans Trapp les menace de les emmener dans son sac s'ils ne promettent pas d'être sages. Il est de coutume de laisser devant sa porte quelques carottes pour l'âne ainsi qu'une boisson et un biscuit pour le Saint Nicolas.
